Simple Slow Cooker Hearty Beef Stew Recipe

It’s October, life is busy, and this week’s Whip It Up Wednesday is all about a hearty meal that is delicious but oh-so-easy to make.

Hearty Beef Stew Recipe:

Ingredients:

2lbs of cubed stew meat

1 pound of baby red potatoes

1 small yellow onion (chunked)

3 cups of beef broth

3 tablespoons tomato paste

1/2 cup of baby carrots

1 tablespoon of Worcestershire sauce

1/4 cup of all-purpose flour

2 minced garlic cloves

3 tablespoons olive oil

1 bunch of fresh parsley

Salt and pepper to taste

Directions:

In a large skillet add your olive oil bringing it a medium heat. Sear your cubed stew meat until lightly browned on all sides. Add a dash of salt and pepper.  Pour the entire skillet into the bottom of your slow cooker. Pour beef broth over meat, add potatoes, onion, and carrots. Slowly stir in tomato paste, Worcestershire sauce, minced garlic, and flour until well blended. Set to low setting, cover and cook for approximately 6-8 hours. Chop your fresh parsley and serve as a garnish on top of your stew.
