Simple Recipe for Grilled Chicken Lime Burritos

It’s back-to-school time and it’s also the perfect time for a whip it up Wednesday recipe that will save your hump day and is guaranteed to be a crowd pleaser at the dinner table.

Ingredients:

1-2 lbs boneless, skinless chicken breasts

1 teaspoon chili powder

2 tablespoons freshly-squeezed lime juice

1/2 cup chopped cilantro

4-6 large soft tortillas

1 teaspoon ground cumin

1 package of shredded cheddar cheese

1/2 cup

1/4 cup olive oil

1 16 ounce can of black beans

1 packet of fajita or taco seasoning

1 container of sour cream

Pre-heat grill to 350 degrees Fahrenheit. While pre-heating the grill combine lime juice, taco seasoning packet, olive oil, cumin, chili powder in a medium mixing bowl and blend well. Allow chicken to marinate in juices for 10 minutes. Place chicken on the grill and allow to cook for up to 30 mins or until the internal temperature reaches 165 degrees F. Place on a cutting board and slice into one-inch strips.

Rinse your can of black beans and place a tablespoon on each tortilla shell, add chicken, sprinkle cheese, top with cilantro and a dollop of sour cream. Roll together in a burrito and serve. Done!
